Whole chicken

Whole roast chicken is meant for sharing with family and friends or simply with your partner along with a bottle of wine.Serves 4

Preparation time: 15 min

Roasting time:1¼-1½ hours

4 potatoes, cut into chunks

1 onion, roughly chopped

olive oil

salt and pepper

1 whole chicken

paprika

half a lemon

1 Preheat the oven to 200 °C.

2 Arrange the potato chunks and chopped onion in an ovenproof dish, drizzle with olive oil and season with salt and pepper.

3 Pat the chicken dry with paper towels, rub well with olive oil and season inside and out with salt, pepper and paprika.

4 Put the lemon in the cavity and truss the chicken so it retains its shape.

5 Put a rack over the potatoes and put the chicken on top.

6 Roast for 15 minutes, reduce the heat to 160 °C and roast for another 1-1¼ hours or until the chicken is done and the skin is crisp and golden.

7 Serve with the potatoes, steamed vegetables and a green salad if desired. To test if the chicken is done, insert a skewer into the thickest part of the thigh.

If the juices run clear the chicken is done.
