Whole chicken

We agree. Whole roast chicken is meant for sharing with family and friends or simply with your partner along with a bottle of wine.

Serves 4

Preparation time: 15 min

Roasting time:1¼-1½ hours

4 potatoes, cut into chunks

1 onion, roughly chopped

olive oil

salt and pepper

1 whole chicken

paprika

half a lemon

rosemary for garnish

Preheat the oven to 200 °C.

Arrange the potato chunks and chopped onion in an ovenproof dish, drizzle with olive oil and season with salt and pepper.

Pat the chicken dry with paper towels, rub well with olive oil and season inside and out with salt, pepper and paprika.

Put the lemon in the cavity and truss the chicken so it retains its shape.

Put a rack over the potatoes and put the chicken on top.

Roast for 15 minutes, reduce the heat to 160 °C and roast for another 1-1¼ hours or until the chicken is done and the skin is crisp and golden.

Serve with the potatoes, steamed vegetables and a green salad if desired.

TIP: To test if the  chicken is done, insert a skewer into the thickest part of the thigh. If the juices run clear the chicken is done.
