Yoghurt Stroganoff with rice pasta

Serves 4

Preparation time: about 20 minutes

Cooking time: about 30 minutes

40 ml olive oil

600 g pork strips

60 ml (1/4 c) cornflour

salt and freshly ground black pepper

1 onion, roughly chopped

1 garlic clove, finely chopped

250 g mushrooms, sliced

1 green sweet pepper, sliced in strips

250 ml (1 c) cooked pasta rice

500 ml (2 c) Greek yoghurt

1 Season the pork strips with salt and pepper. Roll the strips in the cornflour and shake off the excess.

2 Heat some of the oil in a pan and fry the strips until brown and done. Season with salt and pepper. Remove meat from the pan and set aside.

3 Heat more oil and fry the onion and garlic until golden brown. Add the mushrooms and sweet pepper and fry for a few minutes. Return the pork strips to the pan and fry for a minute.

4 Stir in the yoghurt and heat until warmed through. Add the cooked pasta rice and season to taste.
