Chef's recipe: Morogo fritters

Siba Mtongana, cook and presenter on the Food Network’s Siba’s Table, will be dishing up her signature food at this year’s Gauteng Good Food?& Wine Show.

We’ve got our hands on one of Siba’s most popular recipes?–?morogo fritters topped with soy mayonnaise and smoked chicken.



»½ red onion, finely chopped

»2 spring onions, chopped

»2 garlic cloves, finely crushed

»200g spinach or morogo, washed, stalk removed and finely chopped

»3 tbs coriander, chopped

»2 tbs thyme, chopped

»110g maize meal

»Salt and freshly ground black pepper

»60ml water


»60ml mayonnaise

»20ml soy sauce

»Squeezed lemon juice

»1 tsp grated lemon zest

»1 fillet hot smoked chicken, ready to eat


1.?Sauté red onion, spring onions and garlic for a minute in some ­olive oil.

2.?Add the spinach or morogo and herbs, and cook for another minute.

3.?Stir in the maize meal and mix.

4.?Pour in water, season with salt and pepper, and stir to combine. The mixture should be coarse and breadcrumb-like, and the spinach/morogo not fully cooked.

5.?Remove from heat and let it cool enough to handle.

6.?Divide into teaspoonfuls and shape into mini balls using your hands. Flatten slightly, but not too thin otherwise they will break when flipping.

7.?Add a knob of butter to a heated nonstick pan. Cook for a minute on each side until golden, then place on a serving ­platter.

The topping: Mix mayo, soy sauce and lemon juice together. Place a small dab on each fritter. Top with a piece of chicken.
