The Accra – Abuja restaurant in Bez Valley, Johannesburg, is run by the charming Mavis Quarcoo, a fabulous chef who loves cooking and people. She gives service with a broad smile, plenty of spicy home-cooked food and a healthy helping of laughter.

Should you be lucky enough to catch her mom and aunts at the restaurant, you’ll be in for a treat. Mama Regina ­Asubonteng, also known as “Argentina – the One and Only” adds authentic texture to the flavourful menu.

Once you have ordered, Mama Regina spontaneously breaks out into song – or it could be a story, depending on your luck that day. She will also show you the correct way to eat fufu – a staple food in Ghana. The trick is to swallow, not chew!

Mavis’s menu can also be adapted for special occasions, catering and special ­orders 24 hours in advance.

» Palm Nut Soup
A mild, spicy stew made with palm nut creating a velvety, slightly nutty texture
Mix with beef, pig’s feet, crab, herring and cow skin – all in the same pot
Serve with rice or fufu

» Wakye
Black-eyed beans spiced, boiled until soft
Boiled eggs for garnish
Tomato gravy (like chakalaka)

» Gari
Cassava grated like couscous with the tomato gravy mixed in for extra taste

» Omotuo (rice balls)
Soak rice for 30 minutes
Cook as usual until soft
Mash grains with a spatula
Scoop up and shape into balls
Drop them into palm soup

» Fufu
Made from cassava – sometimes plantain is added for variety
A sticky, pap-like staple food eaten with stews and soups at lunchtime.

» Shitto
Shitto is a spicy condiment that goes with most traditional dishes.
