IF YOU are looking to braai something a little more fancy, try out these great braai recipes from Heritage4Braai and Homemakers.


Allow roughly ½ large brinjal per person, wash and slice length-ways into about 1cm slices.

    * 1/3 cup cider vinegar
    * 1/3 cup white vinegar
    * 1/3 cup olive oil
    * 1/3 cup fresh coriander, chopped
    * 6 cloves garlic, minced
    * juice of 1 lime or small lemon
    * 2 tablespoons ground cumin
    * 1 tablespoon crushed black peppercorns
    * 1 tablespoon dried oregano
    * 1 teaspoon fine ground himalayan salt


Combine all ingredients and mix well. This marinade works best if it is made a day in advance. Marinate brinjal slices for no more than a few minutes. Drain and braai, basting as you go. Serve with braaied red and yellow peppers and your favourite bread and salads.



    * Whole chicken(s)
    * 250g butter or margarine
    * Small tub of Marmite or Bovril
    * Juice of half lemon


Melt ingredients together and baste the inside of chicken(s). Fasten chicken drumsticks with a string to secure. Position on spit-arm with two spikes on both sides and put on the braai. Start basting the outside of chicken after a few minutes but don’t add salt and pepper, because the marmite contains lots of salt. Remember, chicken must always be thoroughly cooked, therefore it will take a while.
