New Year's Eve is one of the biggest party nights of the year. What better way to welcome in 2015 than with a great cocktail?

Throwing together a New Year's Eve party doesn't have to be stressful.Cue the confetti and break out the sparkly headgear and fireworks. It's time to usher in a bright new year with tasty alcoholic treats, savoury canapés and your favourite people.

Here are a few cocktail ideas that are simple enough for anyone to make.

1. Sparkling Passion-Fruit Aperitifs


• 6 tablespoons passion-fruit nectar

• Sparkling white wine, such as champagne or Prosecco, well chilled


Divide the passion-fruit nectar between two champagne glasses. Top with the sparkling wine and serve.

2. Lychee Martinis


• 2 whole canned lychees, plus 1/2 cup drained syrup

• 1/2 cup gin


Place 1 lychee in each of two martini glasses. Fill a cocktail shaker with ice. Pour in gin and reserved lychee syrup. Shake well; strain into glasses. Serve immediately.

3. Strawberry Lemonade Vodka


• 1 cup sugar

• 1 cup water

• 1 pint fresh strawberries

• 1 cup fresh lemon juice (about 8 lemons)

• 4-6 cups cold water

• 1 cup vodka, optional


Make a simple syrup by combining 1 cup sugar with 1 cup of water in a saucepan.

Place over medium heat until the sugar in completely dissolved; swirl the pan occasionally. Let cool.

Once the simple syrup has cooled, puree strawberries in a food processor or blender with ½ cup water.

In a large jug, combine ice, strawberry puree, simple syrup and lemon juice. If using the vodka, add it to the jug and stir to combine.

Add 4-6 cups of cold water. The amount of water you use will depend on your tastes, so add as little or as much as you want to achieve desired sweet/tart balance.

Rim your glasses with sugar before pouring, then garnish with fresh strawberries or lemon slices.

4. Peach Margaritas


• 450g sliced peaches (freeze before hand)

• ¾ cup tequila

• ½ cup orange liqueur

• 2 tablespoons peach schnapps

• 3 tablespoons simple syrup

• 2 tablespoons lime juice

• 2 tablespoons lemon juice

• 1/2 tray ice cubes

• Lime or peach slices, for garnish


Combine all ingredients (except for the lime garnish) in a blender.

Pulse/blend until smooth.

5. Blue Sparkling Star Cocktail


• ¼ cup orange infused vodka

• ¼ cup blue curaçao

• Champagne


Rim 2 champagne glasses with blue cocktail sugar.

Pour orange infused vodka into each of the prepared champagne glasses.

Pour blue curaçao into each into each of the prepared champagne glasses.

Top each glass with champagne

Edible Cocktails:

Recommended Pan: 9x9 cake pan

1. Sangria Bites


• 1 3/4 cups Sangria of your choice

• 1 1/2 cups Lime cordial or Lemonade

• 3/4 cup Cointreau

• 4 packets Gelatine – one whole box

• zest of one lime for garnish


Mix the first 3 ingredients in a small sauce pan. Add gelatine and allow to sit for 3 minutes or until gel softens. Turn on heat to medium and heat for a few minutes until gel is completely dissolved, no need to boil or get very hot. Pour into pan lined with plastic wrap. And chill.

To unmold, turn cocktail over onto a cutting board, remove plastic wrap and cut into 36 equal sized pieces. Top each piece with a small bit of lime zest.

Makes 36

2. Mimosa Jelly Shot


• 1 1/2 cups fresh squeezed orange juice

• 1 tbsp sugar

• 3 envelopes gelatine

• 1 1/2 cups champagne

• 1 drop orange flower water, if desired

• Edible flower petals for garnish, if desired


Pour juice and sugar into a small saucepan and add the gelatine. Allow the gelatine to soak for a minute or two. Heat over very low heat until gelatine is dissolved, stirring constantly, about 5 minutes. Remove from heat. Stir in the champagne. Mixture will be foamy - don't panic this will dissipate as the mixture sets.

Add the drop of orange flower water if desired. Pour mixture into pan lined with plastic wrap and place in refrigerator to cool.

To serve, cut into desired shapes. Garnish with edible flower petals, if desired.

Makes 24 to 32

3. Vodka Pink Lemonade Shots


• 2/3 cup pink lemonade

• 2 envelopes (1/4 ounce each) gelatine

• 2/3 cup vodka

• Lemon zest, for garnish


In a large measuring cup, combine the lemonade and 2/3 cup water; strain into a medium saucepan. Sprinkle the gelatine over the liquid and let soften for 2 minutes. Heat over low heat, stirring constantly, until the gelatine is dissolved, about 5 minutes; stir in the vodka.

Pour the mixture into a pan lined with plastic wrap and refrigerate until firm.

Garnish each piece with the lemon zest.

Tips on Making Edible Cocktails

1. Before adding the Gelatine, taste the cocktail first and adjust flavour if needed.

2. Keep chilled at all times! These will dissolve into puddles if not kept cold.

3. Remember the ratio to turn your favourite cocktail into an Edible Cocktail- one packet (7 grams) Gelatine to every 240 ml of liquid. More Gelatine will make the cocktails even more firm if necessary.
