Cooking with ice cream

MOYO Durban’s Ciaran McCormack presented three dishes incorporating Magnum Gold that proved to be interesting taste experiences. The butternut soup was delicious, the dessert was outstanding and the salad was … interesting. I wondered aloud if serving ice cream sprinkled on top of veg would entice my son to eat his greens, but it’s a combination unlikely to catch on, I suspect.

A specially created cocktail, Gold Delight, with three tots of alcohol (see recipe), was like a sharp klap to the side of the head masquerading as an overly sweet milkshake. The waitress was visibly disappointed that I declined it after a few sips.

I was grateful to be able to enjoy an ice cream-less main course as I’m not sure how it would go with prawns.

Since the ice cream was usually served “on the side” it was clearly not easy to incorporate it into the ingredients, even for an executive chef. Still, it was an interesting idea and Ola gets full marks for creativity and innovation.

That said, Magnum Gold, which will be available until April, is as decadent and delectable as the advertising suggests. It is so rich that a mini ice cream is more than sufficient.

For ice-cream lovers and adventurous chefs, here are two Magnum Gold recipes.


MAKE a smooth butternut soup and add some toasted, uncrushed cumin seeds. Just before serving, fold in some chopped coriander and brunoise tomatoes for colour. Place in an espresso cup, warm and top with cappuccino foam.

Make brittle by making caramel with a sprinkling of black pepper (a small amount as the caramel really brings out the spice). When a crisp caramel has been achieved, throw this down on an oiled surface or a non-stick mat. While it is still “wet”, sprinkle with with toasted coriander seeds and some deep-fried ginger.

Put two slivers of brittle on the top of the soup. Arrange coriander in a ball on top, with some fine flower petals like marigold or carnation.

Serve the ice cream in a small side dish.

25 ml vodka

25 ml Nachtmuzik

27,5 ml Amarula

1 Magnum Gold ice cream


Blend ingredients with crushed ice and serve.
