BROWNIES
500 ml (2 c) flour
500 ml (2 c) caster sugar
5 ml (1 t) bicarbonate of soda
2,5 ml (½ t) salt
250 ml (1 c) butter
30 ml (2 T) cocoa powder
125 ml (½ c) water
2 eggs
125 ml (½ c) amasi
2,5 ml (½ t) vanilla essence
ICING
60 ml (¼ c) butter
45 ml (3 T) cocoa powder
45 ml (3 T) amasi
560 ml (2¼ c) icing sugar, sifted
2,5 ml (½ t) vanilla essence
Preheat oven to 180°C.
Grease a baking pan and set aside.
Brownies sift together the flour, sugar, bicarbonate of soda and salt.
In a medium saucepan, beat together butter, cocoa powder and water.
Bring mixture to the boil while stirring continuously, then remove from heat.
Add chocolate mixture to the flour mixture. Beat with mixer on medium speed until smooth.
Add eggs, amasi and vanilla.
Beat for 1 minute more and into prepared pan
Bake for 30 min or until tooth pick comes out clean.
ICING
In a small sauce pan mix together butter, cocoa and amasi and place on medium heat for 5 minutes, remove from heat then add the icing sugar and vanilla.
Pour the warm chocolate amasi icing over the warm brownies then spread evenly.
Cool and cut into bars.
