Apricot chicken

olive oil, for browning

8 chicken thighs

400 g tin apricot halves


200 ml (¾ c) apricot jam

15 ml (1 T) soy sauce

zest and juice of 1 lemon

pinch of chilli flakes

salt and pepper to taste

handful parsley, chopped

30 ml (2 T) water

  1. Heat a large deep frying pan over medium-high heat. Add a splash of oil and brown the chicken pieces all over until the skin is crisp and golden.
  2. Glaze: Mix together all the glaze ingredients.
  3. When the chicken is golden brown and almost cooked through, add the glaze. Allow the glaze to simmer gently, basting the chicken regularly until the glaze has reduced and the chicken is cooked through.
  4. Stir in the apricots and serve.
