Bacon and mushroom pasta

Serves 4 to 6

300 g pasta

15 ml (1 T) oil

80 g butter

1 onion, chopped

250 g bacon, chopped

250 g mushrooms

300 ml cream

handful Parmesan cheese, grated

  1. Cook the pasta in a large pot of salted water according to the packet instructions. Drain well.
  2.  Meanwhile, heat a pan over medium heat. Add the oil, butter, onion, bacon and mushrooms. Cook stirring for 5 minutes or until the bacon is crisp.
  3. Add the cream, simmer for 2 minutes or until slightly thickened. Add the pasta and sprinkle the Parmesan over. Stir through. Season with salt and pepper
