Bake these allergy-free brownies

In her book Cooking for an Allergy-free Lifestyle artist and cook Tammi Forman shares delicious tried-and-tested family recipes for people with allergies. Here is one for easy, delicious chocolate brownies.

Makes 16

Preparation time: 15 min

Baking time: 40-50 min

Standing time: 10 min


  • 250 ml (1 c) barley/soya flour
  • 250 ml (1 c) rice flour
  • 250 ml (1 c) rye/millet flour
  • 250 ml (1 c) maize meal
  • 250 ml (1 c) cocoa powder
  • 375 ml (1½ c) sugar
  • 20 ml (4 t) baking powder
  • 250 ml (1 c) soy milk
  • 60 ml (¼ c) sunflower oil
  • 10 ml (2 t) vanilla essence
  • 500 ml (2 c) black coffee
  • 2 large eggs
  • icing sugar for dusting

Chocolate sauce

  • 125 ml (½ c) dark chocolate chunks or chips
  • 60 ml (¼ c) soy milk

Do this:

Preheat the oven to 160 °C. Grease and line a rectangular casserole dish.


  1. Combine the flours, maize meal, cocoa powder, sugar and baking powder in a large bowl and whisk.
  2. Combine the milk, oil, vanilla essence and coffee and mix. Lightly whisk the eggs in a bowl and blend into the coffee mixture.
  3. Make a well in the centre of the dry ingredients and pour in the coffee mixture. Stir until just blended.
  4. Pour the batter into the dish and bake for 40-50 minutes. Remove and leave to stand for 10 minutes.
  5. Remove the baking paper and with a toothpick poke 20 holes in the cake.

Chocolate sauce

  1. Melt the chocolate and milk over water on the stove.
  2. Pour the sauce over the warm cake, cut into squares and sift over a dusting of icing sugar.
