Beef mince and mushroom lasagna

Siba and TV celebrity Carol Manana make some of the popular sports presenter’s favourite recipes at her home in Fourways, Joburg.

Carol says this is usually on her menu whenever she has friends over for supper.

Serves 6-8


30 ml (2 tbsp) oil

2 onions, thinly sliced

2 cloves garlic, chopped

500 g button mushrooms, sliced

1 kg lean beef mince

2 sprigs fresh thyme, chopped

410 g (1 can) tomato mix

250 ml (1 cup) water or vegetable stock

White sauce

60 ml (¼ cup) butter or margarine

60 ml (¼ cup) flour

1 L (4 cups) milk

a pinch nutmeg

salt and pepper

Also needed

375 g lasagna sheets

125 ml (½ cup) grated Parmesan cheese


1. Mince mixture Preheat the oven to 180 °C and grease a medium-size oven dish. Heat the oil in a large pan and sauté he onions and garlic for 2 to 3 minutes until softened.

2. Add the mushrooms, beef mince and thyme. Cook, while stirring, for 5 minutes until the mushrooms start to wilt. Stir in the tomatoes and the stock or water and simmer until thickened. Set aside.

3. White sauce Heat the butter in a saucepan until melted.

Add the flour and stir until it resembles bread crumbs. Pour in the milk, while stirring, and cook for 5 minutes.

4. Add the nutmeg, season with salt and pepper, then stir over low heat for 3 to 4 minutes until thickened.

5. Spoon half the mushroom and beef mince mix into the oven dish and spread one-third of the white sauce over it. Cover with lasagna sheets. Repeat layers, ending with the white sauce.

6. Scatter Parmesan cheese on top. Cover with foil and bake for 30 minutes, then uncover and bake for 15 minutes.
