100 g mixed lettuce leaves
½ cucumber, sliced
3 spring onions, sliced
20 g cherry tomatoes, sliced
5 ml (1 t) butter
salt and pepper
200 g sirloin steak
Dressing
100 g mushrooms, sliced
10 g biltong slices
10 ml (2 t) whole mustard mixed with 15 ml (1 T) water
15 ml (1 T) cream
SALAD
In a large bowl combine the lettuce, cucumber, spring onions and cherry tomatoes.
Heat the butter in a pan over medium heat.
Season the steak with salt and pepper and sear both sides for 5 minutes each.
Place steak on a cutting board to cool and cut crosswise into thin slices and top with the salad.
DRESSING
Add the mushrooms to the steak pan and sauté over medium heat until softened.
Add the biltong followed by the mustard mix and cream.
Simmer for 3 minutes and remove from the heat to cool.
Spoon enough dressing over the salad and serve the rest on the side.
