Cauliflower and cheese bake

Cauliflower and cheese – a great low-carb meal.

230 g cottage cheese

500 ml (2 c) full-fat milk

pinch cayenne

pinch nutmeg

salt and pepper

300 g Cheddar cheese, grated

200 g cauliflower, blanched

250 g bacon, chopped and fried

30 g butter

Preheat oven to 180 °C.

1. In a blender purée cottage cheese, milk, cayenne, nutmeg and salt and pepper. Reserve 60 ml (¼ cup) grated cheese for topping. In a large bowl, combine remaining grated cheese, milk mixture, cauliflower and bacon. Pour into prepared pan and bake for 30 minutes.

2. Stir gently, sprinkle reserved cheese over and dot with butter. Bake for 15 minutes more until browned.
