Chicken roll-ups

If you have time in the morning, prepare these roll-ups so you can cook them quickly in the evening.

1 kg readymade bread dough

250 ml (1 c) sweet chilli sauce

375 ml (1½ c) grated mozzarella cheese

5 chicken breasts, cooked and shredded

3 spring onions, chopped

1 egg, lightly whisked with 15 ml (1 T) water

1                    Preheat the oven to 200°C. Grease a baking sheet and set aside.

2                    Divide the dough in two and roll out one piece on a clean, lightly floured surface. Trim the dough to 25×40 cm and spread half the sweet chilli sauce evenly over it. Sprinkle half cheese, chicken and spring onion over. Roll up from a short edge. Repeat with the remaining dough and filling ingredients.

3                    Using a serrated knife, cut the rolls into 4 cm lengths. Transfer to a baking sheet and put in a warm place for 15 minutes or until the dough has doubled in volume.

4                    Brush with the egg mixture and bake for 15 minutes or until golden.
