Chickpea and Nut burger

Serves 6

800 g (2 tins) chickpeas

300 g (1 packet) spinach, finely chopped and cooked

4 spring onions, finely chopped

½ bunch fresh coriander, finely chopped

5 ml (1 tsp) ground cumin

5 ml (1 tsp) ground coriander

100 g walnuts, roughly chopped

2 eggs

125 ml (½ cup) breadcrumbs

125 ml (½ cup) flour

salt and pepper to taste

30 ml (2 tbsp) olive oil

6 wholewheat rolls

lettuce, tomato, gherkins and onion to serve

1 In a bowl mash the chickpeas into a coarse paste.

2 Combine the mashed chickpeas with the spinach, spring onions, fresh coriander, ground cumin, ground coriander, chopped walnuts, eggs, breadcrumbs and flour. Season with salt and pepper.

3 Form into six patties and lightly dust with flour. Place the patties in the freezer for 10-15 minutes.

4 In a hot pan fry the patties in the olive oil for 5-8 minutes on each side until golden on both sides.

5 Serve patties on seeded wholewheat rolls with lettuce, tomato, gherkins and onion.
