Serve with ice cream to finish it off

Serves: 6

500g mixed berries

125 ml (½ c) caster sugar, plus 15 ml (1 T) sugar

500 ml (2 c) self-raising flour

10 ml (2 t) baking powder

Pinch of salt

75g chilled butter, diced

1 egg

100 ml buttermilk

Preheat oven to 180C.

  1. Spread berries over the base of an ovenproof dish and sprinkle with 15 ml (1 T) caster sugar.
  2. Sift the flour, baking powder, the 125 ml (½ c) caster sugar and a pinch of salt into a bowl, add the butter and work together until the mixture looks like fine breadcrumbs.
  3. Break the egg into the buttermilk and beat together well. Add to the dry ingredients and mix together lightly into soft dough. Drop spoonfuls of the mixture over the top of the berries, leaving a little space between each one, then sprinkle with extra sugar if preferred.
  4. Bake in the oven for 30 minutes until golden and bubbling.
