Delicious pasta with fish

Though Stoan enjoys salmon with the spinach pasta, you can use whatever fish is available, such as hake and even haddock, as salmon is quite pricey. if using snoek, make sure you remove the bones before serving. you can also use plain pasta instead of the spinach one.

preparation time: 10 min

cooking time: 20 min

serves 4

You will need


a pinch of salt

30 ml (2 tbsp) oil

500 ml (2 cups) warm water

250 g (½ packet) spinach ribbon

pasta noodles

Creamy Vegetable Sauce

250 ml (1 cup) frozen peas

375 ml (1 ½ cups) water

a pinch of salt

3-4 mint leaves, chopped

60 ml (¼ cup) chopped fresh coriander

400 g (1 bunch) spinach, finely shredded

1 sachet (60 g) of vegetable soup mixed with 250 ml (1 cup) water

60 ml (¼ cup) cream

juice of 1 lemon

salt and freshly ground pepper


4 pieces of salmon or hake

15 ml (1 tbsp) butter

juice of ½ lemon

15 ml (1 tbsp) chopped parsley

2 cloves garlic, crushed


1. Preheat the oven to 180°C. 2. lightly grease a roasting pan with oil. 3. add the salt and oil to the water and bring to the boil. add the pasta and cook for 8-10 minutes until al dente (just done and firm – not overcooked). drain the water, and add more oil to prevent pasta from sticking together. 4. Put the peas in salted water in a pot and bring to the boil. Cook for 8-10 minutes or until the peas are soft then set aside. stir in the chopped mint, coriander and spinach. 5. add the dissolved soup and cook for about 5 minutes or until done. add the cream and cook for another 2 minutes. transfer the mixture to a blender and blend until smooth. lightly season with salt and pepper and set aside in a warm place. 6. Put the fish in the prepared dish and dot with butter, sprinkle with lemon juice, parsley and crushed garlic. bake in the oven for 5-8 minutes or until the fish easily flakes with a fork and it no longer looks glassy. serve with the pasta and sauce.


* To cut down on fat, use plain yoghurt instead of cream.

* Stoan likes to garnish this dish with fresh lemongrass, so if you’re cooking for special guests, do the same.

* you can use smoked trout instead of salmon.
