Diabetic chicken egg fried rice

Preparation time: 10 min

Cooking time: 30 min

Serves 6

You’ll need: 

  • 4 chicken breasts, cubed
  • 1 onion, sliced
  • 250 g mushrooms, sliced
  • 3 carrots, grated
  • 100 g broccoli
  • 2 garlic cloves, chopped
  • 5 ml (1 t) ginger, grated
  • 15 ml (1 T) chilli garlic sauce
  • 4 eggs
  • 250 ml (1 c) brown rice, cooked

Do this: 

  1. Heat an oiled pan over medium heat, add the chicken and cook until cooked through. Set aside.
  2. In the same pan add the onion, mushrooms and carrots and cook for 2 minutes. Add the broccoli, garlic and ginger and cook for another 5 minutes.
  3. In a jug mix the chilli garlic sauce with 60 ml (¼ c) water and add to the vegetables. Mix in the chicken.
  4. In an oiled pan on high heat add the eggs and fry until they’ve almost set. Stir in the rice, then the chicken mixture.
