Episode 2: Brenda Mtambo - West African Chicken and peanut stew with fragrant rice

Afro-Soul singer Brenda Mtambo creates an aromatic African chicken dish with tasty flavours of peanuts, garlic, ginger and cloves.

Preparation Time: 20 mins

Cooking Time: 1 hr

Serves: 6

125 ml (½ cup) peanut butter

30 ml (2 tbsps) tomato paste

60 ml (¼ cup) water

30 ml (2 tbsps) cooking oil

1, 2 kg chicken pieces

1 onion, chopped

1 garlic clove, crushed

30 ml (2 tbsps) ginger, grated

3 chilies, chopped

3 tomatoes, peeled and chopped

2 chicken stock cubes, dissolved in 500ml (2 cups) hot water

2 bay leaves

Salt and pepper to taste

Serve with Spekko Fragrant Rice

1 Mix the peanut butter, tomato paste and water. Cook in a saucepan over a low heat until oils appear on top. Remove from the heat and set aside.

2 In a pot, heat the oil over a medium heat and brown the chicken pieces. Add the onions, garlic, ginger, chilies and tomatoes. Stir through and cook for 10 minutes.

3 Add the peanut butter mixture and stock to the chicken, season to taste and bring to boil. Lower the heat and simmer for 45 minutes or until chicken is tender. Serve with the Spekko Fragrant Rice
