Actress Relebogile Mabotja makes Mutton Biryani

Once tasted, a biryani will be one of your favourite meal as actress, singer and producer Relebogile Mabotja creates this dish in the Spekko Kitchen. It has its origins in the East and is popular in Malaysia and India

Preparation Time: 2 hrs

Cooking and Baking Time: 2 hrs

Serves: 6-8

1kg stewing mutton


3 cinnamon sticks

5 cardamom pods, crushed

2 green chilies, chopped

2, 5 ml (½ tsp) turmeric

5 ml (1 tsp) masala spice

45 ml (3 tbsp) dry biryani mix

1 large tomato, grated

250 ml (1 cup) buttermilk or Maas


125ml (½ cup) oil

2 large onions, chopped

2 medium potatoes cut into wedges

15 ml (1 tbsp) ginger, grated

15 ml (1 tbsp) garlic, crushed

5ml (1tsp) salt

375 ml (1 ½ cups) Spekko Basmati Aromatic Indian Rice

180 ml (?cup) brown lentils

4 eggs, hard boiled, cut into wedges

60 ml (¼ cup) butter, melted

5 ml (1 tsp) turmeric, dissolved in 1 tablespoon of hot water

Extra hard boiled eggs and coriander for garnish

Preheat oven to 180C

1 Marinade, Place the meat in a large bowl. Combine all the marinade ingredients and spoon over the meat. Mix well and allow to marinade for 2 hours or overnight.

2 Stew, Heat the oil in a pan over a medium heat. Add the onion, potatoes, garlic, ginger and salt and sauté until potatoes are lightly browned. Add the meat, cover and cook for a further 30 minutes.

3 Cook the Spekko Basmati rice according to packet instructions. Cook the lentils in hot water until soft. Drain both the rice and lentils and mix together.

4 Spoon half of the rice into an oven proof dish, top with a layer of the mutton stew, followed by the boiled eggs and finished with the remaining rice mixture.

5 Drizzle the mixture with the butter and turmeric. Cover with and bake for an hour. Remove the dish from the oven and garnish with coriander and extra egg edges. Serve with sambals.

Spekko Kitchen Tips: Substitute the meat with chicken pieces or use Spekko Parboiled Long Grain Rice if Basmati rice is not available.
