See how easy it is to turn a simple flatbread into a great meal

Serves: 4

Preparation: 10 min

Cooking: 15 min

375 ml (1½  c) flour

5 ml (1 t) baking powder

pinch of salt

30 ml (2 T) olive oil

125 ml (½ c) milk


125 ml (½ c) pesto

handful rocket

handful preserved artichokes

60 ml (¼ c) balsamic reduction

  1. Combine dry ingredients in a large bowl and mix olive oil in to make some chunky bits. Make a well in the centre and pour in milk. Mix. Knead for 3 minutes.
  2. Divide the dough into 4 pieces and roll each out flat.
  3. Heat a cast iron skillet over medium-high heat until water sizzles when you splash some on it. Cook each flatbread for about a minute on each side until bubbly and brown.
  4. Topping: Spread pesto, rocket and artichoke over. Drizzle with balsamic reduction.
