Homemade granola

Start your day with this energy-boosting breakfast packed with fruit, nuts and seeds.

Serves 6

80 ml (? c) maple syrup

80 ml (? c) brown sugar

100 g butter, melted

5 ml (1 t) ground cinnamon

1 litre (4 c) rolled oats

100 g walnuts, chopped

125 ml (½ c) mixed seeds

100 g almonds, chopped

125 ml (½ c) raisins

125 ml (½ c) dates, chopped

60 ml (¼ c) desiccated coconut

Preheat the oven to 180 °C. Line a baking sheet with baking paper.

  1. In a bowl or jug mix the syrup, sugar, butter and cinnamon.
  2. Put the oats, walnuts, seeds and almonds on the prepared baking sheet, drizzle the syrup mixture over and stir until everything is well coated. Spread out evenly on the baking sheet.
  3. Bake for 30 minutes, stirring the mixture after 15 minutes.
  4. Remove from oven, stir in the raisins, dates and coconut. Set aside to cool completely.
  5. Break up the granola and store in airtight containers for up to 2 weeks.
