Lamb kofta with cauliflower

2 garlic cloves

3-cm piece of fresh ginger

1 green chilli

1 onion

60 ml (¼ cup) desiccated coconut

350 g lamb mince

Curry sauce

15 ml (1 tbsp) oil

1 onion, chopped

2-cm piece of fresh ginger, grated

15 ml (1 tbsp) garam masala

5 ml (1 tsp) turmeric

400 g tin chopped tomatoes

1 head cauliflower, broken

45 ml (3 tbsp) plain yoghurt

½ cucumber, grated

salt and pepper

  1. Pulse the garlic cloves, ginger, chillies and onion to a paste in a blender, mix the paste with the coconut and lamb mince. Season and roll into balls, then chill.
  2. In a pan with oil, fry the onion, ginger, garam masala and turmeric over medium heat for 5 minutes. Stir in the tomatoes and a splash of water and simmer for 5 minutes.
  3. Add the meatballs, cover and simmer for 15 minutes. Add the cauliflower and let it steam in the pot for 5 minutes.
  4. Mix the yoghurt and cucumber, mix well and season with salt and pepper. Serve yoghurt mixture spooned over the meatballs.
