Lunch box ideas: Chicken and pea pasta salad

Buy disposable cutlery in bulk to pack in your child’s lunchbox so nobody becomes upset about lost property when you prepare this treat for school.


Preparation time: 15 min

Cooking time: 25 min



250 g shell pasta

10 ml (2 t) salt

250 ml (1 c) peas

1 red pepper, diced

200 g (2 rounds) herbed feta

cheese, crumbled


4 chicken breasts, cut into


grated zest of 1 lemon

5 ml (1 t) olive oil

salt and freshly ground peper


45 ml (3 T) olive oil

15 ml (1 T) balsamic vinegar

15 ml (1 T) lemon juice

60 ml (¼ c) chopped fresh


salt and freshly ground peper


Pasta Cover the pasta with boiling water and add the salt. Microwave for 10-12 minutes or until just done but still firm. Drain and toss with the remaining pasta ingredients. Set aside.

Chicken Season the chicken breasts with the lemon zest, oil, salt and pepper. Put the chicken in a microwave-proof glass dish and microwave for 10-15 minutes or until done, stirring every 5 minutes.

Dressing Whisk together all the ingredients. Pour over the chicken and mix well. For the lunchbox Allow the salad to cool. Spoon into small containers with lids. Pack into the lunchbox with an ice brick.
