Massaman curry pot

Massaman curry paste is a creamy Thai curry with a mildly spicy and nutty flavour.

Serves: 4 to 6

Preparation: 5 minutes

Cooking: 1½ hours

15 ml (1 T) oil

2 onions, chopped

1 x 400 g can of coconut milk

50g massaman curry paste

500 g pork, cubed

Salt and pepper

500 ml (2 c) chicken stock

Few drops of fish sauce

10 ml (2 t) soy sauce

15 ml (1 T) tomato paste

5 ml (1 t) sugar

200 g potatoes, sliced

  1. Heat oil in a pot over medium heat. Sauté the onion until soft. Add the coconut milk and curry paste and cook for 3 minutes while continuously stirring.
  2. Add the meat and the remaining ingredients, except the potatoes. Cook for 1 hour over low heat.
  3. Add the potatoes and continue cooking for 30 minutes or until potato is soft.
