Meat loaf

A quick and effortless meal made in the microwave.

Serves 6

500 g beef mince

125 ml (½ c) breadcrumbs

1 egg

60 ml (¼ c) milk

30 ml (2 T) oxtail soup powder

45 ml (3 T) tomato sauce

45 ml (3 T) Worcester sauce

1        Use wet hands to mix all the ingredients in a bowl.

2        Divide into two equal pieces. Place on a microwave-safe dish and pat to shape into two rounded loaves.

3        Cover with clingfilm and cook for 8 minutes, turning halfway through the cooking time. Serve sliced with mixed greens.

Tip: Vary the taste by incorporating your favourite flavourings in the meat loaf mixture, for example onions and herbs.
