Colourful and tasty meal

Serves: 4 - 6

Small handful mint, chopped

Small handful coriander, chopped

3 garlic cloves

30 ml (2 T) olive oil

500g hake portions

1 aubergine, sliced

4 baby marrows, sliced

2 red peppers, cubed

2 yellow peppers, cubed

85g feta cheese, crumbled

250g cherry tomatoes

Preheat the oven to 180C.

  1. Using a pestle and mortar blend together the mint, coriander and garlic, then add 15 ml (1 T) olive oil. Smear the herb mixture over the fish.
  2. Place the aubergine, marrow and peppers on a baking sheet. Drizzle with the remaining olive oil. Place into the oven to roast for 20 minutes.
  3. Remove from the oven and top with the fish, feta and cherry tomatoes to the tray. Return to the oven for a further 10 minutes until the cheese just starts to brown.
