Microwave fish with tomato and pasta rice

Rosmarino pasta looks like grains of rice.

Serves 4

Preparation: 10 min

Cooking: 20 min

750 ml (3 c) boiling water

salt and pepper

250 g rosmarino pasta (see note)

1 can (400 g) whole tomatoes

2 garlic cloves, finely chopped

5 ml (1 t) brown sugar

15 ml (1 T) dried mixed herbs

1 lemon juice

125 ml (½ c) chicken stock

15 ml (1 T) tomato paste

4 x 150 g hake fillets

fresh basil, chopped, to serve

1        Pour the boiling water into a microwave-safe bowl, season with salt, add the pasta and cover with clingfilm. Microwave on high power for 8 minutes. Stir and drain.

2        Mix the tomatoes, garlic, sugar, mixed herbs, lemon juice, chicken stock and tomato paste in a separate microwave-safe bowl, cover and microwave on high for 5 minutes. Season with salt and pepper.

3        Season the fish with salt and pepper put on a flat plate. Microwave on high for 4 minutes or until done.

4        Mix the fish with tomato sauce and serve with the pasta. Garnish with chopped basil.
