Mince puffs

15 ml (1 T) oil

½ onion, finely chopped

1 garlic clove, crushed

400 g beef mince

15 ml (1 T) red curry paste 250 ml (1 c) frozen mixed vegetables

60 ml (¼ c) water

a handful of coriander leaves, chopped

2 X 400 g puff pastry

1 egg, lightly beaten

chutney, to serve

  1. Heat the oil in a pan over medium heat, then add the onion and garlic and fry until soft. Add the mince and curry paste,cook for 5 minutes while stirring.
  2. Add the mixed vegetables and water. Let simmer for 3 minutes. Add coriander. Set aside to cool.
  3. Roll out the pastry over a lightly floured surface. Cut out tea-cup-sized rounds and place 2 tablespoons of mince mixture on each. Press the edge together to seal. Repeat with the remaining mince and pastry.
  4. Brush with egg and bake for 20 minutes or until golden. Serve with the chutney.
