Ox Liver

This recipe is from 12-year-old Kaloso Rakgotla from Gabane in Botswana. She says she enjoys lamb or calf liver and usually serves this old favourite with veggie kebabs and potatoes. We used ox liver which is just as good.

serves 4

You will need

500 g ox liver

salt and black pepper

5 ml (1 tsp) cayenne pepper

10 ml (2 tsp) barbecue spice

20 ml (4 tsp) butter

5 ml (1 tsp) oil

Serve with

baby potatoes

grilled veggie kebabs


1. Wash and clean the liver and pat dry with a clean kitchen paper towel. Remove the outer membrane and cut into equal-sized slices. 2. Mix the spices on a flat plate and coat each piece of liver with spices and set aside. Heat the butter and oil in a large frying pan and fry for about 2minutes on both sides until browned all over but still a bit pink inside. Remove and set aside. 3. Serve the liver while still warm with baby potatoes and grilled vegetable kebabs of your choice.
