See how easy it is to make your own pancake batter.

500 ml (2 c) flour, sifted

10 ml (2 t) baking powder

125 ml (½ c) caster sugar

2 eggs

500 ml (2 c) milk

80 g butter, melted

fresh fruit, to serve

maple syrup

  1. Place the flour, baking powder and sugar in a bowl and make a well in the centre.
  2. Combine the egg, milk and butter, gradually pour into the well and whisk until smooth.
  3. Heat a lightly greased non-stick pan over low heat. Ladle 60 ml (¼ c) of the mixture into pan, cook for 2 minutes or until bubbles appear on the surface.
  4. Flip and cook for 1 minute more. Repeat with remaining mixture.
  5. Stack the pancakes on individual plates, top with fresh fruit and drizzle with syrup.

Tip: Reduce the ingredients by half to make 15 pancakes, rather than 30.
