Pap Lasagna

Have you run out of lasagna sheets? no worries. Use mealie meal following this easy recipe. Remember to preheat the oven to 180°C.

Cooking time: 1 hour

serves 6

You will need


1 litre (4 cups) water

5 ml (1 tsp) salt

30 ml (2 tbsp) butter

500 ml (2 cups) mealie meal

250 ml (1 cup) frozen or tinned corn kernels

125 ml (½ cup) cream

500 ml (2 cups) grated

cheddar cheese. (Use some for topping)



45 ml (3 tbsp) oil

4 cloves garlic, chopped

400 g (1 bunch) spinach,thoroughly washed and shredded

salt and freshly ground pepper

1 onion, chopped

1 kg lean beef mince meat

30 ml (2 tbsp) veggie sprinkle spice

1 can (410 g) diced and peeled tomatoes

250 ml (1 cup) chicken stock

60 ml (¼ cup) freshly chopped basil or parsley


1. PAP Heat the water, salt and butter in a large pot and bring to the boil. Add the mealie meal, cover and simmer for 5 minutes. 2. Stir until well combined, reduce the heat, cover and cook for 20 to 30 minutes, stirring occasionally. Add the corn, cream and half the cheese, stirring until well combined and cooked. 3. SPINACH Heat half the oil in a frying pan and sauté half the garlic for 2 minutes. Add the spinach and stir for a few minutes or until slightly wilted. Season with salt and pepper and set aside. 4. MINCE Heat the rest of the oil in the same pan and sauté the onion and remaining garlic for 2 minutes or until soft. Add the mince in batches and fry until it’s browned. 5. Season with salt and pepper and the veggie sprinkle. Pour in the canned tomatoes and stock, and simmer for 15 minutes or until cooked. Add the herbs and cook until done. Set aside. 6. LAYERING In a medium-size ovenproof dish, spread a third of the pap followed by mince then pap, mince, spinach and ending off with another pap layer. Sprinkle with the rest of the cheese and bake for 10 minutes or until it has melted in a preheated oven.
