Pasta bake

A simple and economical way to prepare a cheesy pasta meal.

1 onion, finely chopped

2 garlic cloves, crushed

15 ml (1 T) oil

2 handfuls cherry tomatoes, quartered

125 ml (½ c) chicken stock

5 ml (1 t) sugar

salt and pepper to taste

300 g macaroni pasta

150 g mozzarella, grated

Preheat the oven to 200 °C

  1. Fry the onion and garlic in oil until soft and translucent then add the tomatoes, stock and sugar.
  2. Bring the sauce to a simmer then reduce the heat and allow to simmer for 10 minutes until reduced and thickened slightly. Season with salt and pepper.
  3. Cook the pasta according to packet instructions, then drain.
  4. Layer the pasta with tomato sauce and cheese. Place in the oven for 15 minutes until golden.
