Perfect ammo for a snack attack

This crumbed chicken strip and avo dip recipe packs a tasty punch for even the fussiest eaters. Get your kids to join in the preparation and prepare the perfect treat for lunch, dinner or even a children’s party.

  • 4 chicken fillets, cut into thin strips
  • salt to taste
  • 2 egg whites
  • 4 slices wholewheat bread, processed into fine crumbs
  • 45 ml (3 T) finely grated Parmesan cheese
  • 15 ml (1 T) oil
  • 15 ml (1 T) dried parsley

Preheat the oven to 220 °C and line a large baking sheet with aluminium foil. Pat chicken strips dry and season lightly with salt. Whisk egg whites until frothy.

Combine the breadcrumbs, Parmesan cheese, oil and parsley and spread the mixture evenly on a plate. Dip the chicken strips in the egg white and then roll in the crumb mixture. Place the chicken strips on the baking sheet and grill for about 7 minutes a side or until golden and done. Serve with avo dip (see tip).

Tip: Make an avo dip by blitzing together until smooth 1 sliced ripe avocado, 45 ml (3 T) fresh lemon juice, 125 g smooth fat-free cottage cheese, salt and a little ground white pepper.
