Pizza salad

I got this recipe from Gerry Elsdon, she used pizza but because she is diabetic, she now cuts out starch and sugars in her diet. So she will make this recipe using salad leaves as the base and top it with whatever health treats her heart desires, like the one below.

Serves 6



1 packet (400 g) mixed salad leaves

6 beetroots, cooked

1 small red cabbage, shredded

1 tin artichokes (optional), drained and quartered

6 sweet piquante peppers, sliced

3 chorizo sausages, sliced

60 ml (¼ cup) shaved Parmesan cheese


60 ml (¼ cup) balsamic vinegar

60 ml (¼ cup) olive oil

salt and pepper


1. BASE AND TOPPINGS Scatter the mixed salad leaves in a flat round platter to create the base for the pizza.

2. Cut the beetroot into quarters and scatter them on the bed of leaves. Add the shredded cabbage, artichokes (if using) and piquante peppers.

3. Heat a frying pan, dry fry the slices of chorizo sausages for 2 minutes then scatter them on the pizza. Finally, top with the cheese shavings.

4. DRESSING Mix together the vinegar, oil and salt and pepper. Drizzle over the pizza salad just before serving.
