Plum clafoutis

Clafoutis is a French fruit dessert with a light batter.

Serves: 6

Preparation: 5 min

Cooking: 30 min

3 eggs, beaten

45 ml (3 T) flour

pinch of  salt

80 ml (? c) castor sugar

450 ml milk

50 g butter, extra to grease

4 plums, halved

Preheat your oven to 200 ºC.

  1. In a bowl, add the flour, salt and 45 ml (3 T) castor sugar to the beaten eggs. Mix well, then put aside. Warm the milk in a saucepan until lukewarm, then stir this into the egg mixture to make custard.
  2. Grease a shallow ovenproof dish with butter, put the plums on the bottom then pour the egg batter over them. Dot the remaining butter on top in little knobs.
  3. Place in the oven to bake for 25 minutes until the egg has set. Sprinkle the remaining castor sugar over.
