Poppy seed muffin

750 ml (3 cups) flour

15 ml (1 T) baking powder

2, 5 ml (½ t) bicarbonate of soda

Pinch salt

15 ml (1 T) poppy seeds

200g butter, softened

250 ml (1 c) sugar

2 eggs

375 ml (1 ½ c) plain yogurt

1 lemon zest

Preheat oven to 180°C. line a 12 hole muffin pan with cupcake cups.

  1. In a large bowl sift the flour, baking powder, bicarbonate of soda and salt.
  2. In a separate bowl beat butter and sugar until pale and creamy. Add in eggs one at a time beating.
  3. Mix in the plain yoghurt, lemon zest and poppy seeds. Pour the butter mixture into the dry ingredients and mix until well blended.
  4. Pour into prepared cupcake cups and bake for 15 minutes or until golden.
