Quick Paella

Cooking time: 20-30 min

Serves 4

1 large onion, finely diced

1 red pepper, sliced

2 cloves garlic

300 g rice, uncooked

750 ml (3 cups) chicken stock

5 ml (1 tsp) paprika

1 bunch fresh parsley, finely chopped

200 g frozen peas

450 g frozen mussels, thawed

450 g frozen calamari, thawed

salt and pepper

1 Add oil to a heated pan and fry the onions, pepper and garlic until soft.

2 Add the rice and toss well so all the grains are well coated. Add the chicken stock and bring to the boil until the rice is cooked.

3 Add the paprika, parsley and remaining ingredients to the rice mixture.

4 Allow to simmer until all the ingredients are cooked through. Season with salt and pepper and serve with lemon wedges.
