Roast chicken

You will need

1 whole chicken

30 ml (2 tbsp) sea salt

freshly ground black pepper

60 ml (¼ cup) butter

30 ml (2 tbsp) oil

15 ml fresh rosemary, chopped

1 lemon, quartered

6 cloves garlic, roughly chopped


1. Preheat the oven to 160 °C and lightly grease a roasting pan with butter. 2. Rub the chicken with salt, pepper, butter, oil, rosemary and garlic. Place in roasting pan with lemon and cover with foil. 3. Cook for 1 hour until golden, turning and basting every 15 minutes. Reduce the heat to 70 °C and keep warm for up to 30 minutes until serving time.


Keeping the chicken in the oven at 70 °C helps prevent the skin from shrinking. Be careful to remove from the oven after 30 minutes, or it will become dry, particularly the wings and breast.
