Spaghetti hake

Serve garnished with basil.

30 g butter

15 ml (1 T) oil

200 g hake fillet

250 ml (1 c) cream

60 ml (¼ c) white wine

60 ml (¼ c) sweet chilli sauce

salt and pepper

400 g spaghetti, cooked

basil to garnish

1                    Heat the butter and oil in a frying pan over medium heat and cook the fish for 3 minutes on each side or until golden. Remove from the pan and set aside.

2                    Wipe out the pan and pour in the cream, wine and sweet chilli sauce. Simmer over low heat for 3 minutes or until slightly reduced.

3                    Flake the fish and add to the cream mixture. Season with salt and pepper and stir in the cooked pasta. Serve garnished with basil.
