Stuffed chicken breast

When I’m bored and I’ve run out of ideas of what to do with my chicken fillets, I simply stuff them and bake them and there’s my supper. This is a great healthy option as chicken breasts have little fat and only a small amount of oil is used in cooking.

Preparation time: 10 minutes

Baking time: 10-15 minutes

Serves: 4-6

You will need

6 chicken fillets


15 ml (1 tbsp) oil

3 rashers of bacon, chopped

2-3 carrots, finely grated

½ onion, finely chopped

½ red, yellow and green peppers, finely chopped

80 ml (? cup) dry breadcrumbs

45 ml (3 tbsp) freshly chopped parsley

50 g (1 round) feta cheese, crumbled

Salt and pepper

Serve with Roast veggies and mash potatoes


1.    Preheat the oven to 180 °C and lightly grease a baking tray. Put each chicken breast flat on a chopping board. Make an incision in the breast, cutting it lengthwise (see picture below). Put on the prepared baking tray.

2.    Stuffing: Heat a little oil and fry the bacon for 3 minutes or until slightly crispy. Remove from heat and mix with all the ingredients in a bowl. Scoop spoonfuls into the hollowed chicken fillets. Brush the stuffed chicken with oil from the pan. Sprinkle with herbs and season lightly. Bake for 10 to 15 minutes until cooked. Serve with mashed potatoes and roast veggies
