Sweet potato tuna patties

Running out of ideas of things to do with sweet potatoes? Here’s a delicious, healthy snack

Makes: 12 patties

Cooking time: 9 min

2 small sweet potatoes, peeled and sliced into chunks

2 x 170 g cans tuna in brine, drained and flaked

4 spring onions, chopped

125 ml (½ c) breadcrumbs

2 eggs

½ red onion, finely chopped

1 yellow pepper, finely diced

1 garlic clove, crushed

10 ml (2 t) chilli flakes

handful parsley

salt and pepper

20 g butter

  1. In a medium pan, bring water to a boil and add the sliced sweet potatoes. Cook for about 15 minutes or until tender. Drain and transfer to a large bowl and mash with a fork.
  2. Add the tuna and the rest of the ingredients to the mashed sweet potatoes. Mix well until all the ingredients are combined.
  3. With your hands, shape the mixture into patties. Leave to stand in the fridge for 30 minutes.
  4. Heat a non-stick frying pan over medium-high heat, add a piece of butter and fry the patties for about 3 minutes or until golden brown.
  5. Serve as a snack with a dipping sauce of your choice.
