Tapioca pudding

Make your own sweet and creamy, delicious pearl pudding. Never know how to use the tapioca that you see on shop shelves? Just follow this simple recipe.

Serves: 6

Preparation: 5 minutes

Resting time: 30 minutes

Cooking: 15 minutes

125 ml (½ c) tapioca

250 ml (1 c) water

500 ml (2 c) milk, divided into two cups

2 egg yolks

125 ml (½ c) sugar

Pinch of salt

Vanilla essence

  1. Soak tapioca in water for 15 minutes. Add 1 cup milk and soak for 15 minutes.
  2. Whisk remaining milk, egg yolks, sugar and salt until a smooth mixture is achieved.
  3. Transfer to a pot over medium low heat. Add tapioca mixture. Heat and stir frequently for 15 minutes. Do not walk away from the pot and stir continually the last 5 minutes.
  4. Remove from heat, stir in vanilla and serve.
