Toasted breakfast

Breakfast really is the most important meal. This one is easy to make and looks amazing.

100 g streaky bacon rashers

1 ripe avocado

1 red chilli, finely chopped

handful of mint, chopped

juice of ½ lime

2 eggs

4 slices bread

butter to spread

Heat the oven to 220 °C.

  1. Lay the bacon rashers on a foil-lined baking tray and grill in the oven for 15 minutes, turning once, until crisp.
  2. Mash the avocado. Stir in the red chilli, mint and the lime juice to taste into the mashed avocado. Season generously with salt and pepper.
  3. Fry the eggs to your liking in a little bit of oil and toast the bread, then spread with butter. Divide the avocado mixture between the toast slices, then top with the bacon and a fried egg. Serve immediately.
