Tomato smoor

Add vava voom to your boerewors roll with this easy-to-make tomato smoor

Serves 6

Preparation: 10 min

Cooking: 20 min

15 ml (1 T) oil

2 onions, finely chopped

15 ml (1 T) curry powder

5 ml (1 t) paprika

400 g can chopped tomatoes

250 ml (1 c) water

1 beef stock cube

15 ml (1 T) tomato paste

400 g boerewors, grilled

6 hotdog rolls

handful coriander to garnish

1. In a pan with heated oil, brown the onions until soft. Add the curry powder and paprika and fry for 2 minutes stirring constantly.

2. Add the tomatoes and water and bring to the boil. Add the beef stock cube, reduce the heat and simmer for 5 minutes.

3. Add tomato paste and allow to simmer for 10 minutes, stirring continuously until thickened. Serve the spicy tomato smoor with a boerewors roll and garnish with coriander.
