Ostrich Scotch Eggs

  • Serves 4
  • Preparation time: 15 min
  • Cooking time: 20 min

You’ll need:

  • 4 eggs
  • 300 g ostrich mince
  • 5 ml (1 t) thyme
  • 1 onion, finely chopped
  • salt and freshly ground black pepper
  • 125 g flour
  • 1 egg, whisked
  • 125 g breadcrumbs
  • oil for deep-frying

Do this:

  1. Put the eggs in salted water and bring to the boil. Reduce the heat and to simmer for 9 minutes. Allow to cool then shell.
  2. Meanwhile mix the mince with the thyme and onion in a bowl and season with salt and pepper.
  3. Divide the mince into four, roll each into a ball and flatten on a clean surface to form discs.
  4. Put the flour on a plate. Roll the eggs in the flour to coat and put one in the middle of each mince disc. Wrap the egg in the mince, making sure it’s completely covered.
  5. Dip each Scotch egg in the egg then roll in the breadcrumbs to coat.
  6. Heat oil in a deep saucepan. When hot, fry the eggs for 8-10 minutes or until golden. Remove with a slotted spoon and drain on paper towels.
