Most kids are mad about cheese. And with this delicious recipe you won’t only satisfy everyone’s taste buds, you’ll also be feeding them fishy brain food. Checkers has an amazing range of cheese you could try for other variations on this dish.

Serves 4

250 g hake

250 g smoked haddock

125 g prawns, shelled and uncooked

1 T flour, heaped

salt and pepper to taste

juice of 1 lemon

1 carrot

1 stick celery

225 g Fairview Erik’s Selection Mature Goat’s Gouda, grated

100 ml parsley, chopped

1        small chilli, chopped (optional)

125 ml (½ c) cream

125 g butternut

500 g potatoes

  1. Make sure the fish is cut into small chunks with all bones and skin removed.
  2. Toss the fish and prawns into a plastic bag with the flour and shake well.
  3. Season with salt and pepper, then drizzle the lemon juice over.
  4. Grate the carrot, celery and 125 g of the Mature Goat’s Gouda over the top, add the parsley, chilli and cream and set aside.
  5. In a pot of salted water, cook the butternut and potatoes until soft. Mash with a potato masher, then add the butter and milk, and season. Stir in the remaining 100 g of gouda.
  6. Spoon the mixture over the fish, then bake in the oven for 40 - 45 minutes until golden brown and bubbly. Underneath the lovely yellow mash, you’ll find an amazingly creamy, chowder-like seafood “stew”.
