Victoria cake

An elaborate cake named after the Queen Mother

Preparation time: 10 min

Baking time: 20 min

Makes 12 slices

4 eggs

250 ml (1 c) caster sugar

225 g butter, melted

250 ml (1 c) self-rising flour

10 ml (2 t) baking powder

Filling and covering

whipped cream


1.    Preheat the oven to 180°C. Grease two round tins and line each with baking paper.

2.    In a large mixing bowl mix together the eggs and caster sugar until pale and fluffy. Add the butter and fold in the flour and baking powder. Mix until well blended.

3.    Divide the mixture evenly between the two tins and smooth the tops of the batter.

4.    Bake for 20 minutes. Let the cakes cool in the tins before removing and placing them on a wire rack to cool completely.

5.    Level each cake. Spread one cake with whipped cream and scatter with strawberries. Place the second cake on top and cover with the remaining whipped cream and strawberries.
